
Double Chocolate Cupcakes
need I say more? Chocolate is my go-to when baking, there are so many wonderful things you can me with it and these double chocolate cupcakes don’t disappoint.
I am in love with how they taste and fast super fast and easy to make! Perfect for a last-minute Valentine’s Day dessert or an everyday tasty treat.
These cupcakes are amazing all on their own but since Valentine’s Day is so close, I add chocolate covered strawberry on the top cupcake to give it more of a V-Day feeling but feel free to leave that part out if you don’t want it.

Cupcake Batter
The cupcake mix has a really amazing texture, it reminds me of a rich dense chocolate cake, and with the chocolate chips added into the dough, you really get that chocolate taste.
To make this double chocolate cupcake mix you are going to start off by adding the flour, sugar, cocoa powder, baking soda, and salt into a medium-size bowl. (Note that this bowl will be your main mixing bowl)
Once all the dry ingredients have been added to the bowl mix it all together with a whisk. My cocoa powder had some clumps so I whisked it until the clumps had been mixed into the flour.

Now that you have the dry ingredients mixed together set aside that bowl and grab a smaller bowl and add in your egg, milk, vegetable oil, vanilla, and water.
Whisk together until combined, when it has been mixed together add it into the bowl with the dry ingredients.

Mix together until the cupcake mix is smooth, once the mix has been stirred together add in the chocolate chips, this is what makes the cupcakes double chocolate. You can leave the chocolate chips out if you just want a chocolate cupcake.
Once everything has been combined, line your cupcake pan with liners and fill each liner about half full with the cupcake mix. Once each liner has cupcake mix in it, cook in the oven at 350 degrees for 18-22 minutes or until the toothpick comes out with a few moist crumbs.

Chocolate Cream Cheese Frosting
While the cupcakes are cooking you can start to make the chocolate cream cheese frosting. First, you are going to add into a mixer the butter, vanilla, cream cheese, cocoa powder, and powder sugar. Once all the ingredients are in the mixer, mix for 2-3 minutes or until the frosting is smooth.

Once the cupcakes are out of the oven, take then out of the cupcake pan and put them on a cooling rack and let cool completely before frosting.

Chocolate Covered Strawberries
Grab a microwave-safe bowl and add in chocolate chips with coconut oil and microwave in 20-30 second increments, until the chocolate is smooth and silky looking. While the chocolate is melting get a plate with parchment paper on it for the strawberries.

Use a toothpick to hold the strawberry while you dip it in the chocolate. Once you have the strawberries covered in chocolate put them on the parchment-covered plate and put them in the refrigerator while you frost the cupcakes.
Once you have the cupcakes frosted place a chocolate covered strawberry on each cupcake and enjoy!

These Double Chocolate Cupcakes are super easy and fast to make. They are a great treat to have on hand or for a get-together.
Ingredients
Double Chocolate Cupcakes
- 1 c. Flour
- 1/2 c. Sugar
- 6 Tbsp. Cocoa Powder
- 1 tsp. Baking Soda
- 1/2 tsp. Salt
- 1 egg
- 1/2 c. Milk
- 1/2 c. Vegetable Oil
- 1 tsp. Vanilla
- 1/4 c. Water
- Optional 1/2 c. Chocolate Chips
Chocolate Cream Cheese Frosting
- 1/2 c. Softened Butter
- 1 tsp. Vanilla
- 4 c. Powder Sugar
- 8 oz. Cream Cheese
- 2 Tbs. Cocoa Powder
Chocolate Covered Strawberries
- 1/2 c. Chocolate Chips melted
- 1 Tbs. Cocount Oil
- 13 Strawberries
Instructions
- Preheat oven to 350 degrees and prepare a cupcake pan with liners and set aside.
- In a medium-sized bowl add in the flour, sugar, cocoa powder, baking soda, and salt. Mix together until combined and set to the side.
- In a smaller bowl add in the egg, milk, vegetable oil, vanilla, and water, mix together until the mix is well combined.
- Once the wet ingredients have been combined, add the wet ingredients to the bowl with the dry ingredients and mix together until smooth.
- Once the dough is smooth add in the chocolate chips and mix them into the dough.
- Using a spoon fill the cupcake liners halfway, and bake for 18-22 minutes or until a toothpick comes out with a few moist crumbs.
- Remove the cupcakes from the oven and move them to a cooling rack and let cool completely.
- While the cupcakes are baking you can make the chocolate cream cheese frosting.
- In a mixing bowl add in the butter, vanilla, powder sugar, cream cheese, and cocoa powder. Mix together until the frosting is smooth.
- Once the cupcakes have cooled begin to frost them.
- Once the cupcakes are frosted, melt the chocolate chips with the coconut oil in the microwave in 20-30 second increments until the chocolate is smooth. Dip the strawberries in the chocolate and place them on a plate that has parchment paper.
- Place the plate with the strawberries in the fridge for 5-10 minutes then place a strawberry once each frosted cupcake and enjoy!
