How To Make Pumpkin Mini Muffins

Fall is a beloved time of year for me, because of all the yummy baking that comes with the change in the leaves.

Out of all of the things to bake with pumpkin is my go-to ingredient, There are so many things you can make with pumpkin everything from cookies and pies to muffins, fall dinners and so much more.

This year one of my favorite things to make has been pumpkin mini muffins! Not only are they super easy to make, but they take less than an hour to make them, and they taste amazing.

Pumpkin mini muffins are a great way to fill that pumpkin craving. They are the perfect treat for a family gathering or a bite of fall just for you. These muffins are tasty with just the right amount of sweet and savory. Best of all they are super quick and easy to make!

How to make Pumpkin Mini Muffins

Pumpkin Mini Muffins are fast and super simple to make. First off this is a firmer dough to work with, with that being said you can make it in a mixer and not mix it by hand. In this recipe, it is mixed by hand but you can make it with a mixer.

Preheat oven to 350F.

I like to start this recipe of pumpkin mini muffins off by grabbing a smaller bowl and add in the flour, baking soda, baking powder, salt, and the pumpkin pie spice. Once all the dry ingredients have been added to the bowl do a quick stir and set aside.

Why I like to add the dry ingredients all together before putting them in with the wet ingredients is to help mix the salt, soda, and baking powder, and any other baking spices that you add more evenly throughout the dough.

In a bigger bowl add in the sugar, and butter, mix until it is well combined. Once their are combined add in the pumpkin puree and mix together.

Once the sugar, butter, and pumpkin puree are mixed together, grab that bowl of dry ingredients you set aside earlier and slowly start to add them into the wet ingredients, mixing as you add.

As this is a firmer dough to work with, if you are mixing it by hand it will start to get a little harder to mix but keeping pushing through until it is all mixed together.

When the dough is mixed together, and then set aside while you make the cinnamon-sugar mixture that you are going to roll the dough into. Grab a small bowl, add in the sugar, brown sugar, and cinnamon. Mix together with a spoon.

Once your cinnamon sugar is made grab the dough and start to roll the dough into balls. This is a firmer dough so you can roll it into balls using your hands, make sure to grease your hands in some way, I’ve found that butter works the best.

Roll dough into balls just bigger than a quarter, once you have the dough formed drop them into the bowl with the cinnamon sugar, and using a spoon move them around until they are covered with the sugar.

After the dough balls have been covered with cinnamon sugar. Grab your mini muffin pan and grease it.

When the pan is greased put the dough into each hole in the muffin pan. Once they are in the pan put them in the oven and bake for 6-8 minutes.

Use a toothpick polk in the center of one of the muffins and see when it comes out clean they are done. Once they are done baking, put out the muffins on a cooling rack and let cool. Enjoy!

Is Canned Pumpkin the Same as Pumpkin Puree?

Canned pumpkin is just that, it is cooked pumpkin with no spices. Pumpkin puree is cooked pumpkin with baking spices in it such as cinnamon, nutmeg, allspice, clove, and ginger and is sweetened.

Pumpkin puree is ideal to use to make a fast pumpkin pie filling and when you don’t have the right spices.

Can You Substitute Pumpkin Puree for Eggs

Yes! Pumpkin can take the place of eggs in many baked goods. When substituting pumpkin for eggs use 1/4 cup pumpkin for each egg in the recipe.

Can You Freeze These Pumpkin Mini Muffins?

Yes, you can! You can freeze them for up to 3 months when you freeze them make sure to use a freezer zip lock bag. It will help keep the muffins fresh.

These Pumpkin mini muffins are simple, easy, and tasty. They are the perfect treat to fill that pumpkin craving and are great to have for an on-hand treat.

Ingredients

  • 1 cup granulated sugar
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter softened
  • 1 egg
  • 1 cup canned pumpkin
  • 2 teaspoon pumpkin spice

Instructions

1. In a medium bowl add in flour, baking soda, baking powder, salt, and pumpkin spice, mix together, and set aside.

2. Soften butter in a microwave-safe bowl, once softened add to a bowl and add in the sugar. Mix together well, add in the egg and mix until combined. Once combined add in the canned pumpkin and mix together.

3. Add the flour mixture to the wet ingredient bowl and mix together until just combined.

4. In a small bowl you are going to make the cinnamon-sugar mixture. Add in the bowl 1/4 cup granulated sugar, 2 tablespoons, 2 teaspoon cinnamon, and mix together with a fork.

5. Once the dough is combined roll dough into balls and then roll them in the cinnamon sugar.

6. After the dough balls are rolled in the cinnamon sugar, put one ball into each spot on the mini muffin pan. Bake at 350 degrees for about 8-10 minutes. Use a toothpick to put in the middle of a muffin to make sure it is done, it should come out clean.

7. Remove from the oven and cool in the muffin pan for 5 minutes, then transfer the muffins to a wire rack to cool completely.

Notes

Muffins may be stored in an airtight container at room temperature for up to one week.

Why use a different bowl for the flour mixture?

When you use a different bowl to mix the flour, salt, baking soda and baking powder, and any spices you use, it helps to spread them evenly throughout the dough. In other words, it is to help so you don't have clumps of salt, baking soda, baking powder, or spices in your muffins.
